Friday Poorly.

I feel the plague has finally caught up with the mama.

Sigh.

I can't even take a decent picture.

Tea and Life didn't help much.



I had a hard time playing cuz I just felt like laying down and it was kinda hard to spin the wheel.

Made some applesauce, but that didn't help much either.


 

Actually pear and apples, but who's counting?

Realized the house was too quiet.

Found my boy reading amongst the giant pile of laundry that needs folding.




Sick people really should not fold clothes.

It's not good for them.

Whine. Whine.

It is payday today.

I could rally around that.

Maybe.

Do you Smitten?

Do you know of this food blog called Smitten Kitten?

Wait!  It's Smitten KiTCHEN.

I always type it kitten.  Meow.

Of course you know this blog.

Ms. Mudd turned me on to her.  Thank you Ms. Mudd!

The girl's a rage.

Never had a cooking lesson.

Never even waitressed.

Has a best selling cookbook on the NYT list.  (Hint, hint Santa.)

Love her.

Hate her.

Last night I, on a complete cooking whim, decided to tackle her chicken pot pie.

Now, I rarely eat meat, and I am not a big fan of yard bird, to be truthful, BUT (butt after you read the butter count in this recipe) I do love a pot pie!

I love vegan pot pie, and turkey pot pie, and Shepard's Pot Pie and, now, chicken pot pie.

I am not kidding you when I say we ate this stuff like wolves.

All three of us.

Drooling and shoveling and grunting.

Disgusting and fantastic.

Noisy.

You get the picture.

So, yea, Smitten Kitchen is the best food blog on the Oracle, if you ask me.

I know it's not Friday Food, but you might want to make this on Friday so you can eat it again on Saturday and Sunday without your coworkers staring at you in horror while you rip at it's flesh I mean, crust.

It is that good.

It might be the best thing I ever cooked.

I really mean that. It was incredibly freaking delicious to the point of being weird.

To begin, here's what I did differently:

1.  I used frozen puff pastry instead of making my own crust because a) I am lazy and b) I am lazy.  My friend, Chef Mo, said to make sure to prick (hee hee, she said prick) the tops of the pastry so that it can puff up. 

Warning!!!! Frozen puff pastry needs 40 minutes to defrost.  This is a terrible thing to discover at 6:00 pm when you've just told your family the pies are "going in the oven in 5 minutes."  I ended up holding the big brick of dough over a steaming pot of water and it took less than the dreaded 40.

If you want the crust recipe, Missy Perfecto, head on over there to her site cuz it looked pretty easy. You'll just have to ignore the instructions on the end of the recipe if you're using frozen dough like I did.  Just drape the sheets of thawed puff pastry over the tops of the bowls any old way you want, crimp them down  around the edges of the bowl and then prick them.  I pretty much doubled the sheets of pastry because I loooooove crust.

2.  I did not have any frozen baby onions so I sauteed some mushrooms with the sauteing onions and that worked out just fine and yummy.  I added 1.5 cups of them.

3.  I could not find bouillon cubes at the market anywhere?!?!  What the hell on that?  Some lady told me get Better Than Bouillon, so I did.  It was good shit.  Now I see that she even mentions that in the recipe.

4.  I used less salt because the Better Than Bouillon stock stuff was salty like a sailor and I got scared.  I thought the pies were pretty too salty even still.  I would definitely take the salt down to one teaspoon.  Right before she says to add the heavy cream, she says to add 2 tsps of salt. I added one, but would not add any next time.

5.  She said that this recipe makes 4 bowls.  I'm not sure how big her bowls were, but we had 4 big ramekins, plus two mini bake pans, plus 2 pints leftover (that I ate for breakfast and lunch).

6.  It did not take anywhere near an hour for all this to cook into bubbly and brown.  I think she did some of hers the night before and I did mine all at once so everything was already piping hot.  So just keep an eye and a nose on it.  You'll see when the tops start getting golden.
 

Here's the recipe:
(Apparently it's adapted from an Ina Garten recipe.)

Chicken Pot Pie
Adapted from Ina Garten

3 whole (6 split) chicken breasts, bone-in, skin-on (we used 2 whole/4 split large ones; worked fine)
3 tablespoons olive oil
Kosher salt
Freshly ground black pepper
5 cups chicken stock, preferably homemade
2 chicken bouillon cubes (if you, like us, use Better than Bouillon, the exchange is 4 teaspoons)
12 tablespoons (1 1/2 sticks) unsalted butter
2 cups yellow onions, chopped (2 onions)
3/4 cup all-purpose flour
1/4 cup heavy cream
2 cups medium-diced carrots, blanched for 2 minutes
1 (10-ounce) package frozen peas (2 cups)
1 1/2 cups frozen small whole onions (apparently, Birds Eye sells these; I’ve never found them and peeled fresh ones), blanched for 2 minutes (can do this with the carrots)
Glug of sherry (optional)
1/2 cup minced fresh parsley leaves


Preheat the oven to 350 degrees F.
Place the chicken breasts on a baking sheet and rub them with olive oil. Sprinkle generously with salt and pepper. Roast for 35 to 40 minutes, or until cooked through. Set aside until cool enough to handle, then remove the meat from the bones and discard the skin. Cut the chicken into large dice. You will have 4 to 6 cups of cubed chicken. (We did this a day in advance.)

In a small saucepan, heat the chicken stock and dissolve the bouillon cubes in the stock. In a large pot or Dutch oven, melt the butter and saute the onions over medium-low heat for 10 to 15 minutes, until translucent. Add the flour and cook over low heat, stirring constantly, for 2 minutes. Add the hot chicken stock to the sauce. Simmer over low heat for 1 more minute, stirring, until thick. Add 2 teaspoons salt, 1/2 teaspoon pepper, and heavy cream. Add the cubed chicken, carrots, peas, onions, parsley and a glug of sherry, if you’re using it. Mix well.

Preheat the oven to 375 degrees F.
Divide the filling equally among 4 ovenproof bowls. Divide the dough into quarters and roll each piece into an 8-inch circle. Brush the outside edges of each bowl with the egg wash, then place the dough on top. Trim the circle to 1/2-inch larger than the top of the bowl. Crimp the dough to fold over the side, pressing it to make it stick. Brush the dough with egg wash and make 3 slits in the top. Sprinkle with sea salt and cracked pepper. Place on a baking sheet and bake for 1 hour, or until the top is golden brown and the filling is bubbling hot.

I will admit that I kinda freaked out on the butter content.  I put that much in there, but then drained a bunch of it out.  I'm sure that's what made it all taste so insanely good, but I just don't think I could use that much again next time.  It felt evil.  I saw in the comments section that some people did not use that much and things turned out quite yummy anyway. 

I also did not have any sherry, but I wish I had had some because that sherry taste would have sent this off the charts.  I like the taste of sherry though.  Maybe you don't.

On a scale of 1-10 for difficulty, I think this was a 4 even though it looks kinda tricky.   It was really easy ... just cutting and sauteing and mixing together.  The puff pastry made it super easy.  

I do think the mushrooms added some depth to it.  

I was also surprised that parsley was the only herb, but damn if it wasn't perfect.  I wouldn't shy away from some sage or rosemary next time though, just for kicks.


I hope you try this so that we can oooh and ahhh over it.

I wanna know if you thought it was a heavenly as we did.

I'm gonna try a vegan version of it next time.  Well, actually, probably vegetarian because I'm pretty sure some of that butter is gonna stay.

It's staying on my ass right now, for sure.

Weekending

Well, there we go.

Another big holiday come and gone.

Is it my imagination or does time seem to go more quickly now?

Age old question.

I have to admit that our holiday week (it practically was a whole week!) was pretty slow and easy.

Poor FinnigantheCurious was very sick.  Turns out the infection moved into his lungs.  This gets the big  name of pneumonia.

I'm just old enough to be frightened of that word.  Used to be a very, scary thing that pneumonia.

We caught it early enough that a round of medicine did the trick.

Still, scary-ish.

I got to spend a couple of days with my mama although I was looking forward to more time with her.  In the end though we had good, solid time and that's what counts.

Our Thanksgiving meal was small and lovely.

I took no pictures at all.

Hrmpf.

We usually camp during the TG holiday, but we were thwarted this year by sickness and logistics.

I think we'll head out in a couple of weekends and pretend it's TG.

We're easy like that.

We did get outside a bit though despite illness.

What is it about TG that makes people want to get outside and move?

Gluttony? hahaha.  No, really, it's so wonderful to see just how many people are out hiking and camping.  You can NOT get a campsite in Texas at TG to save your life.  Course, some lucky asses got ours.  Hopefully some family was brave enough to drive on in and see if any sites had opened up.  What a wonderful surprise that must have been for them.

Rock n Roll TG

I made it to my mama's house all safe and sound.

FIVE hours in the car ALONE.

You parents know what I'm saying
here.

Alone.

Five hours.

Bliss.

My little bear was too sick to travel so he stayed home with Jackdaddy and that side of the family.

Sniff.

But this is my mama's first holiday without her husband so my brother and I are gonna be with her.

It's not a burden at all as we both lovvvve our mama to pieces as well as each other. We're gonna have a good old time with lots of naps and some card playin'. Maybe a wild night of dominoes.

Back to my long car drive ... Did I mention that I was alone for 5 hours?

I got caught up on some serious rockin' out.

Project Stock Tank

I'm so sick of dealing with these stock tank ponds.

I love the way they look, but the upkeep is busting my arse.

Well, I should say that I like the way they look when they look good which is not often.

I can't seem to keep the fish alive for long.

When there are fish in them, I have to let the water from the hose sit in a bucket for several days before I can put it in there so as not to kill the fish.

This is no problemo in the summer because I just put a bucket under the A/C drip and I get about 2 buckets every 24 hours.

When the A/C is not in use though, it's the bucket and hose method and I get really sick of doing it so that the ponds mostly look like this.

Blech.

Ugly.

No fish.

I'm too lazy to do this anymore, so I've just about decided to fill them up with plants.

Now, over the years, almost everyone has commented that I needed some height in these.

I never wanted that actually.  I liked there not being anything sticking up.

But now I'm considering sticking up stuff.

Maybe a Blue Elf Aloe like this one:



Or maybe just a plain old aloe vera?

I've got a giant pot in the backyard that is about to burst from being so overcrowded.

That would be good because it would be free, other than the potting soil.

I like free.

Or maybe one of these things ...

This thing grows like crazy.

Or maybe a trip to East Austin Succulents to max out a credit card? 

I would looooove to do that, but I'm going to be good.  

Plus,  if I blew a wad of cash then I would feel the need to prune and futz with them.

Santa, perhaps?

Oh, poo, I think maybe I'll just do the regular aloe vera.

Maybe some Purple Heart hanging down in the front?

I dunno, I have a lot of Purple Heart going on already in the tire planters.

But that would be free too, and ohhhhh so easy.

Sometimes I really do like the look of often repeated plants in the garden.

Sometimes it looks lame.

I worry that mine would look lame.

Again, though, it would be free and easy.

Like me.

Weekending

My weekend was made glorious by a lamp shade, of all things.

Lampshade?  All one word?  

Lamp shade?  Two words?

You know my obsession with old lamps.

You know my utter and complete disdain for finding lamp shades for old lamps.

I bring you the perfect combination ...



 
The lamp was scavenged our our summer trip.

I got the lampshade this weekend from my boyfriend.

I love it to the depths of it's lampish little soul.

Nothing else really mattered other than this, but let's see what I can scrounge up.

Oh, Oh, I know!   I lost my diamond earring that I got for my 40th birthday!!

I was sitting at my bff Jessica's house and she screeched out, "You're missing an earring!"

Madness ensued.

I had been all over the freaking place that day including a run at Lady Bird Lake.

I really thought it was  hopeless.  (I guess I just gave it away, but stay with me to see where I found the little bugger.)

I ripped my car to pieces.  Like a crazy madwoman.  Knowing in my heart that it was an impossible task.

But then, then I saw the back of it squished down in the car seat where the seat and the back meet!!!

That gave me hope.  Not that finding the back means anything because the diamond could still be anywhere. 

 ANYWHERE!

I ran inside and got my strongest cheaters and a headlamp.

I looked at every single tiny bit of every single thing when .... oh! what is that?



The stem of the earring was sticking out of that tiny slot next to the emergency brake!!

Did I run inside and grab tweezers so as not to lose it into the vortex of hell below the brake?

No.  I did not.

I grabbed it ever so carefully and ....

Plunk.

Gone.

Ran back inside, cursing and swearing, and kinda crying.  Grabbed a bunch of tools and proceeded to rip the shit out of my center console.

I was more careful this time and used the tweezers.

So rare for us to be sick twice in one year, but sick he is.

This means that we "had" to watch Glee (Season 4 is out thank god!) and Modern Family for hours on end.

Popcorn and good TV is really good for you.

Friday Food

I'm late this morning because who can climb out of bed on these cold, cozy mornings?

If it weren't for all these damn animals barking, meowing, bokking, bleating (OK, not really any bleating) at me, I'd still be there.

Since it is cold though, I've got the most shitbomb soup recipe for you today.



From a blog I just discovered called OUR BEST BITES.  (More on that below.)

This soup is vegan (omit sour cream topping), gluten free, cheap, easy, and freakin' delicious.

Really, really delicious.  

The kind of soup you can take to a potluck or start your TG meal with.

It was on my table in less than 45 minutes - not kidding.

I'll start with my modifications:

This is actually a summer soup as it's a roasted corn and tomato soup.

Here in Texas, we have a second crop of tomatoes in the fall so I've got plenty of farmers' market beauties sitting on my counter.

I used frozen, organic corn.  Frozen food is actually the closest thing you'll find to fresh as food nowadays is flash frozen at the peak of the season.  I also use frozen corn in most recipes because it's impossible to find local corn that is organic.  Any corn for that matter is extremely hard to find fresh.  Nasty stuff today, ag corn.  Using the frozen corn also cut my work time by a lot.  I also used a fresh red bell pepper instead of jarred. I chopped it up and roasted it with the corn and the tomatoes.

SO, having said all the above, here she blows:



Roast Sweet Corn and Tomato Soup:
Recipe by Our Best Bites, inspired by the Sussman Brothers 


3 cups fresh corn kernels (about 4 cups) (Again, I used frozen.)
10 oz cherry tomatoes (about 2 cups) (I used Romas)
4 cloves garlic, roughly chopped
1 TBL olive oil, divided
1 medium onion, any color, diced (I used purple.)
8 ounce jar roasted bell peppers, drained (Again, again, I had a fresh one and just used it mixed in WITH the corn and tomatoes.) 
4 cups of chicken broth (I used vegetable broth.)
3/4 teaspoon paprika
1/4 teaspoon chipotle chili powder (I had a can of adobo chilies and just used a teaspoon of that.)
sea salt 
freshly cracked black pepper
Garnish of herbs and/or sour cream, if you want.  

Preheat oven to 400 degrees

Place corn, tomatoes, and garlic (plus the bell pepper if you're doing it my way) on a foil-lined baking sheet.  Drizzle with 2 teaspoons olive oil and sprinkle lightly with salt and pepper.  Gently toss with hands and then arrange in an even, flat layer.  (I put all of this in a bowl and tossed with my hands and then put it on the baking sheet.  Much easier.)

Bake for 15-20 minutes or until tomatoes are crinkled and burst.

While veggies are roasting, heat a stock pot to medium high heat on stove top.  Add remaining olive oil (I used a glug), bell pepper if you're using the jarred ones and diced onion.  Saute about 5 minutes, or until tender.  Add broth, paprika and chipotle chili powder (or canned like me).  Add a light sprinkling of salt and pepper.

When corn and tomatoes are finished roasting, add them to the  pot making sure to scrape all the bits off the foil.   

Bring soup to a low simmer and cover. Simmer for 20 minutes.

Use an immersion blender or carefully transfer hot soup to a blender and puree to your liking.

Taste and add additional salt, pepper, chipotle or twatever.

Ladle them up in some bowls and add a dollop of sour cream or vegan sour cream and sprinkle some fresh herbs on top and maybe a few kernels of corn if you have any hanging about. I put green onions on top cuz who wouldn't?

Yields about 6 cups.

Miracle of all miracles, the small boy ate it too!


Course, I can get him to eat almost anything if I put sour cream and lime on it.

The blog is easy to read, it's friendly and funny and those women are just so nice and sweet.

I've heard lots of good about it AND I used to know her when I lived in Los Angeles so double-whammy.

Y'all buy it.

Make her successful.  It's damn hard to be a novelist, you know!

Pretty Things

A little word about consumption before we are swept up by pretty things.

When I post these links to "stuff," I am not in any way trying to promote consumerism.  

As you might have noticed, I am very conscious of where my money goes and what I bring into my home and world.

I also take absolute delight in buying second-hand, trading, regifting, and scavenging.

We also teach Finn about the challenges of over-consumption and how it affects so many things beyond just the pocketbook.

He's an expert on trading in video games if he wants a new (used) one.   Our favorite guy at Game Stop (our favorite store) has commented several times on what a savvy shopper Finn is.  Finn knows to ask if there are further discounts he can get, or if he has enough points on his game card to upgrade, etc..  

He' learned to save money if there's something he really wants.  He's been saving for almost 3 months for an energy sword thing that can only be purchased at The Renaissance Festival.  He'll be getting that next weekend!  I'm so proud of him for learning about the power of saving at his tender age.

(Lord knows it took me years and years.)

We've watched The Story of Stuff several times, and I, personally, watch it every now and then just to refresh my brain.  If you've never seen it, I highly recommend giving it a look.  It's a gentle to reminder to think before you buy.

Now, on the other hand, we practice a feeling of abundance in our family daily.

Basically, this is just being grateful and acknowledging it.

It's the feeling that matters, not so much the actual stuff.

For example, when I'm taking my vitamins and supplements I will say to myself, - I'm so grateful that I am able to have these pills that make me healthier.  I'm so grateful that I don't have to take any medicines right now other than these supplement.

When Finn and I give money to people on the side of the road, (and, yes, we always, always do) we say - Aren't we lucky that we had a dollar to give to someone today?  I bet our dollar helps him buy a cold drink or a warm lunch.  We also practice not feeling sorry for that person, but simple happiness that we were allowed to help.  I believe that feeling sorry promotes pity and that feeling happiness promotes success.


These are some simple ways to practice daily abundance.  I say these kinds of things all day long both out loud and to myself.

Every day we've been saying how grateful we are that we got this giant free rug; we are all loving it!

So, I'm not trying to be smarmy or preachy, I just want to say that I know we are all trying to be conscious and clear about spending.  It's easier for some than others.  Buying things can make us feel good, but often it's a temporary fix.  The mending has to take place inside of ourselves not in the stores.

Now, having said all that, I simply love, love, love to look at beautiful things, especially on  Etsy.

I love homemade, handmade, and vintage and, to me, Etsy is just the most magical place.

It's also very, very affordable.

I feel so good about buying soap from my online friend Lindsey from the blog Northwest Backyard Veggies who has an Etsy shop called BEAR SOAPWA.  We read each other's blogs and that's how we met.  Now I buy her soap!

I also have a friend Christie whom I know in real life.  She has an Etsy page called HAPPYBLUEMOON.  She carries all kinds of delicious stuff, mostly MCM goodies.  I could spend a wad there every day.

So when I share these pretty little things with you, I hope you know that I am not trying to encourage you to spend, per say, but just having fun  sharing goodies of beauty  with you.  

I love, love, love looking at Etsy and Pinterest, but rarely buy anything.  In fact, I'm often inspired to make my own pretties just from seeing something lovely on one of those sites.
