Friday Food

Couldn't you just eat them up?

My mama and my boy.

Precious, precious dears that I love more than life itself.  

The whole of my heart is for these two.



Now, onto bacon.

I don't eat bacon, but my boys loooooove bacon.

(OK, maybe I cheat with a little, tiny, miniscule bit every now and then.)

One day while perusing the fabulous Edible Austin magazine (HOW crazy incredible are those Edible mags, by the way? And FREE!) when I saw a recipe for how to cook perfect bacon.

I have always cooked bacon on the stove top in a skillet.  

Sometimes it's just right, sometimes it's too crisp, sometimes it's too fatty and, ugh, all that grease.

And the clean up. 

Blech times a gazillion.

Well, this recipe calls for cooking it in the oven.

How crazy is that?

Mucho suspect, me thinks, but I try it because a few weeks ago I was forced to feed an entire bag of very expensive Richardson Farm bacon to the dogs because, according to a group of 8-9 year old boys, it was TOO BURNT.

Sigh.

Here's what they said: (The recipe people, not the little boys.)

Preheat oven to 325.
Line a baking sheet with foil.
Place the bacon on the foil and put it in the oven.
Set the time for 25 minutes and don't open the oven until then.

BAM, hos, perfect bacon!


There was only the teensiest bit of grease and it just, POOF, disappeared when I transferred it to the platter.

Perfectly cooked.

Perfect and not greasy and easy clean up.  

Easy clean up from bacon, y'all ... miracle.

So, there ya have it.

I wish I could convince to you have some roasted tofu and walnuts for breakfast, but there would be a mutiny cuz I know how y'all are.

So...bacon for those of you who bacon!

  1. I had some of this last week and it is true: just follow the directions and you will be amazed at how easy and delicious the bacon turns out. You, too, can be an amazing cook just like Michele.

  3. It is not possible for me to have too much bacon. I have never had enough. I love bacon. Don't fix it much cuz I just eat it. I do bake it too in the oven. Greatt way and easy cleanup. I peek all the time though because ya just nevah know how quick it's gonna cook - every time it's different.

  4. We've been oven bacon cookers for a while now. We put it on a cooling rack that's on a cookie sheet, and then all the fatty stuff goes down to the cookie sheet. Clean up is so-so--but don't have to use foil. Alas, there are still times it cooks too long. I have such a hard time finding the bacon doneness sweet spot.
